Pancakes are strongly connected to Lent. On the Tuesday before it begins (Shove Tuesday) people wanted to use up their rich ingredients that they couldn't use during Lent. This included eggs, sugar, and butter. So they used these ingredients to make pancakes. To make pancakes on this day was also suppose to keep vermin, roaches, and bugs away for the year.

Pancakes are also said to be symbols of the sun. It is also said that if you throw one to a rooster and he eats it without calling the hens you will remain single.
