I love love love baked apples, but the time they take to cook in an oven is unjustifiable, so when I saw this I knew I just had to try it out, and it turns out, this recipe's a total keeper!
I didn't have maple syrup (expensive!), so I subbed by sprinkling brown sugar on the top. Kinda looks like a (heavily) sugared doughnut doesn't it? But the sugar at the bottom of the plate came in contact with the water and apple juices, and became deliciously syrup-like.
I've made this a couple of times more, but with less sugar, and more more more cinnamon. The only thing I'm not too keen on doing is coring the apples, the way I handle the knife is rather lethal... Time to look for an apple corer?
